The Brickell favorite debuts an expanded culinary program featuring premium seafood, elevated hot dishes, hand-crafted cocktails, and refined Nikkei influences.
MIAMI, FL — Five years after opening its doors in the heart of Brickell, Paperfish Sushi is entering a new chapter.
The restaurant has officially launched a completely reimagined menu designed to showcase the evolution of modern Japanese dining while embracing the bold flavors and cultural influences that have helped define Miami’s culinary landscape.
The new menu introduces a collection of premium seafood preparations, elevated sushi offerings, signature hot dishes, and Nikkei-inspired creations developed to deliver a more dynamic dining experience from beginning to end.
Highlights include the Hamachi Tiradito, featuring thinly sliced yellowtail with bright citrus accents; Toro Tartare prepared with premium fatty tuna; Miso Black Cod; Truffle Fried Rice; and Cacio e Pepe Udon, a dish that bridges Japanese technique with contemporary global influences.
“Our goal wasn’t to simply add new dishes,” said Jose Vazquez, Partner of V&E Hospitality. “We wanted to redefine the experience and create a menu that reflects where both the restaurant and the city are today.”
Known for its sleek design, energetic atmosphere, and commitment to quality ingredients, Paperfish has become a fixture in Brickell’s dining scene since opening in 2021. The new menu represents the most significant culinary investment in the restaurant’s history and reflects months of research, testing, and refinement.
In addition to new dishes, guests will discover a broader selection of shareable plates, expanded premium seafood offerings, and a more balanced progression between traditional Japanese preparations and contemporary Nikkei influences.
The relaunch arrives as Brickell continues to establish itself as one of South Florida’s most vibrant dining destinations, attracting both local residents and international visitors seeking elevated culinary experiences.
Paperfish is part of V&E Hospitality Group, one of South Florida’s leading hospitality companies, known for creating distinctive restaurant and entertainment concepts throughout the region.
The new menu is now available at Paperfish Sushi in Brickell.
